Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken meat
Forms the bulk of the croquette and gives it its main savoury flavour.
Eggs
Bind the mixture and set when heated, holding the croquette together.
Onion
Browning in butter builds a sweet, savoury aroma into the filling.
Butter
Adds fat and richness while browning the onion.
Cracker crumbs
Form a crisp, golden outer coating when fried.
Lemon juice
Adds acidity that brightens the flavour of the rich filling.

The step that matters

Fry in boiling lard until golden brown. Very hot fat sets the crumb coating quickly so it crisps instead of soaking up grease. Frying too cool lets the coating absorb fat and the croquette turn soggy or heavy.

Swap the mace

How well each one fits the dish's main ingredients (meat, onion, butter, pepper, lemon, egg, wine):

  1. Thymefits better
  2. Parsleyfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against meat, onion, butter, pepper, lemon, egg, wine. Candidates are from the same food group and used in at least 100 recipes.
