Fried Eggs

Ingredients

Directions

Fry the eggs

  1. Heat enough fat in a frying pan to nearly cover the eggs.

  2. Break the eggs into a cup and gently slip them into the hot fat.

  3. Do not turn the eggs; instead, dip the hot fat over them.

Variation and sauce

  1. For a variation, beat the eggs and strain them through a coarse colander into the hot fat, then drain and serve on toast or with bacon.

  2. To make Beurre Noir, add more fat to the frying pan, let it brown, then stir in an equal amount of vinegar and chopped parsley, and pour over the eggs.

What each ingredient does

Eggs
Provide the main body of the dish; their proteins set when heated, forming the cooked white and yolk.
Butter or oil
Conducts heat to the eggs and gives the frying fat flavor and a crisp-edged finish.
Vinegar
Adds sharp acidity to the browned butter sauce, balancing its richness.

The step that matters

Do not turn the eggs; spoon hot fat over them. Turning breaks the yolk and sets the eggs unevenly. Spooning hot fat over the top cooks the whites through gently while keeping the yolk intact.

Swap the parsley

How well each one fits the dish's main ingredients (egg, butter, vinegar):

  1. Tarragonfits better
  2. Parsleythe original
  3. Capersfits about as well
  4. Dillfits about as well

Fit is the average pairing score against egg, butter, vinegar. Candidates are from the same food group and used in at least 100 recipes.
