Directions

Prepare the oysters

  1. Select large oysters, drain, strip, and dry them on a towel in a single layer.

  2. Sprinkle each oyster with coarse sea salt and cayenne pepper.

Bread and rest

  1. Beat the egg until yolk and white are well mixed, then stir in warm water.

  2. Season stale bread crumbs lightly with salt and cayenne.

  3. Cover each oyster with the bread crumbs, then coat with egg, and cover again with crumbs.

  4. Place the coated oysters on a board or large platter in a single layer.

  5. Let them stand for 1-2 hours in a cool place before frying.

Fry and serve

  1. Cook in deep fat hot enough to brown a bit of bread in 40 seconds.

  2. Drain and serve hot, with Sauce Tartare, olives, sour gherkins, or lemon slices.

What each ingredient does

Large oysters
The main ingredient, whose moist interior is cooked through by the hot fat.
Egg
Binds the bread crumbs to each oyster so the coating holds during frying.
Stale bread crumbs
Form a crisp, golden coating that browns in the hot fat.

The step that matters

Frying in hot fat. If the fat is not hot enough, the coating soaks up oil and turns greasy before it browns. Hot fat sets the crumb crust quickly, keeping the oyster inside tender and the coating crisp.
