Why it works: Onion and pepper are a kitchen classic. They rank in the top 11% of all ingredient pairs, and cooks put them together in 68,474 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Pot Roast

Ingredients

Directions

Sear the meat

  1. Place the meat skin side down in a pot and sear until browned.

  2. Turn the meat occasionally until the entire surface is browned.

Simmer

  1. Add the bay leaf, onion slices, and boiling water.

  2. Bring to a boil, then reduce heat and simmer slowly.

  3. Cook for 15 to 20 minutes per pound until the meat is tender.

  4. Turn the meat once during cooking.

  5. When halfway done, add salt and pepper.

  6. If the meat is scorching, add a little more boiling water.

  7. At the end, there should be just enough liquid to cover the bottom of the pot.

What each ingredient does

Meat
Browning in the pot builds flavor, and slow simmering breaks down connective tissue to make it tender.
Boiling water
Provides moisture so the meat simmers gently instead of scorching on the pot bottom.
Onion
Adds aromatic sweetness and flavor to the cooking liquid as it softens.

The step that matters

Sear the meat until fully browned. Browning creates deep flavor through the Maillard reaction. Pale meat skipped in the pan will taste flat, and the sauce will lack depth.

Swap the onion

How well each one fits the dish's main ingredients (meat, pepper):

  1. Capsicumfits better
  2. Mustardfits better
  3. Carrotfits better
  4. Onionthe original

Fit is the average pairing score against meat, pepper. Candidates are from the same food group and used in at least 100 recipes.
