Why it works: Parsley and celery match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 6,810 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Ensure the meat is free from gristle.

  2. Mix all ingredients together. If using butter, melt it first.

  3. Shape the mixture into a compact loaf about 6 inches long.

  4. Place the loaf in a small baking pan.

  5. Top with 1 tablespoon chopped suet or an equal amount of butter cut into small pieces.

  6. Pour enough boiling water into the pan to barely cover the bottom.

Bake and serve

  1. Bake in a 400°F (200°C) oven for 30 minutes, basting every 10 minutes.

  2. Serve cold or hot with tomato sauce.

  3. Optionally, make a brown sauce in the pan like for roast beef.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean beef
Provides the main protein structure and meaty body of the loaf.
Suet or butter
Adds fat that keeps the loaf moist and gives a rich texture.
Stale bread crumbs
Absorb juices and help bind the mixture so the loaf holds its shape.
Worcestershire sauce
Adds savoury, tangy depth that seasons the meat throughout.

The step that matters

Basting during baking. Basting every 10 minutes keeps the surface moist and helps prevent the loaf from drying out during the 30-minute bake at 400°F.

Swap the onion
