Corned Beef, Boiled

Ingredients

Directions

  1. Wipe the corned beef and bind it with a strip of muslin to keep its shape.

  2. If the meat has been in pickle for a long time, start cooking it in cold water to draw out some salt.

  3. For better results, cover the meat with boiling water and simmer gently for 30 minutes per pound until tender, removing scum as it rises.

  4. If serving cold, let the meat cool in its liquid, then transfer to a platter, cover, and place a weight on top to firm it for slicing.

  5. For a hot boiled dinner, prepare vegetables like potatoes, carrots, cabbage, turnips, and onions, and add them to the pot with the meat.

  6. Cook beets separately and serve them hot with butter, salt, and pepper, or cold sliced in vinegar.

  7. Cook squash or pumpkin in a separate saucepan, mash it, and prepare with butter, salt, and pepper.
