Scalloped Mutton

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Stir the onion juice into the tomatoes and season to taste.

  3. Mix the melted butter with the bread crumbs.

Layer and bake

  1. In a greased baking dish, layer half of the mutton, season lightly, then add half of the tomatoes, and spread half of the crumbs on top.

  2. Repeat the layers with the remaining ingredients.

  3. Baste the top with boiling water.

  4. Bake on the upper rack for about 30 minutes, or until medium brown.

  5. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooked mutton
Provides the main meat body and savoury flavour of the dish.
Bread crumbs
Absorb the butter and juices, forming a soft layer that browns on top.
Melted butter
Adds richness and helps the crumb topping brown in the oven.
Tomatoes
Add moisture and acidity that keep the layers juicy during baking.

The step that matters

Basting the top with boiling water. Adding boiling water before baking moistens the crumbs so they do not dry out or scorch before the dish is cooked through.
