Broiled Chops of Mutton or Lamb

Ingredients

Directions

  1. Remove any pink skin and excess fat from the chops, then wipe the meat.

  2. Grease a heated broiler with some of the fat from the chops.

  3. Broil the chops over a brisk fire, turning once each minute for 6 to 8 minutes.

  4. Cook until well puffed and lightly browned for rare meat, or until no red juice flows for well-done.

  5. Season both sides quickly with salt and pepper, then place on a heated dish and serve immediately.
