Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Hominy
- Forms the bulk of the croquette and absorbs the milk to become a thick, cohesive mass.
- Milk
- Cooks into the hominy, adding moisture and softness to the interior.
- Egg yolk
- Binds the mixture as it cooks, helping it hold its shape when formed.
- Grated cheese
- Adds savory flavor and some richness to the croquette filling.
The step that matters
Coat with egg and bread crumbs, then fry in deep, hot fat. Hot fat sets the crumb coating quickly and browns it, sealing the filling inside. If the fat is not hot enough, the croquettes absorb oil and turn greasy and may break open.
Swap the white pepper
How well each one fits the dish's main ingredients (parsley, milk, onion, egg, cheese):
- Thymefits better
- Dillfits better
- Garlicfits better
- White pepperthe original
Fit is the average pairing score against parsley, milk, onion, egg, cheese. Candidates are from the same food group and used in at least 100 recipes.
