Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rich milk
Provides the liquid and fat that form the creamy body of the dessert.
Junket tablet
Rennet enzyme that coagulates the milk proteins so the dessert sets into a soft custard.
Granulated sugar
Sweetens the milk and adds body to the finished set dessert.
Caramel
Adds a toasted, sweet flavour that deepens the dessert.

The step that matters

Add the junket to milk that is no longer hot. Rennet works best at lukewarm temperatures; if the milk is too hot the enzyme is destroyed and it will not set properly, and if it is too cold it sets slowly.

Swap the almond

How well each one fits the dish's main ingredients (milk, junket, sugar, vanilla, cream):

  1. Almondthe original
  2. Chestnutfits about as well
  3. Cocoafits less well
  4. Nutsfits less well

Fit is the average pairing score against milk, junket, sugar, vanilla, cream. Candidates are from the same food group and used in at least 100 recipes.
