Raw Oysters

Ingredients

Directions

Prepare

  1. Carefully strip the oysters, ensuring no small pieces of shell remain.

  2. If rinsing is necessary, use the oysters' own liquor instead of water.

Serve

  1. Place crushed ice on a small plate and lay five or six oysters on top.

  2. Add a slice of lemon on the plate.

  3. Set the small plate on a larger one to catch melting ice water.

  4. Serve with coarse sea salt, paprika or cayenne, and wafers or whole wheat bread.

  5. If available, serve the oysters in their deep shells with their liquor.

What each ingredient does

Oysters
Provide the main raw flavour, briny sweetness and a soft, delicate texture.
Lemon slices
Add acidity that brightens the briny flavour of the oysters.

The step that matters

Stripping the oysters and removing shell fragments. Small bits of shell are hard to see in raw oysters and are unpleasant to bite on. Keeping the oysters' own liquor when rinsing preserves their flavour, since water dilutes it.

Swap the lemon

How well each one fits the dish's main ingredients (oyster, wheat):

  1. Figfits better
  2. Pumpkinfits better
  3. Cherryfits better
  4. Lemonthe original

Fit is the average pairing score against oyster, wheat. Candidates are from the same food group and used in at least 100 recipes.
