Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base that the starch thickens into a creamy pudding.
Egg yolks
Add richness and help thicken and enrich the custard.
Sugar
Sweetens the pudding and helps the egg yolks thicken when beaten.
Cornstarch
Thickens the milk into a smooth, set pudding as it heats.

The step that matters

Stirring the egg mixture into the boiling milk. Adding the eggs to very hot milk without constant stirring can scramble them into lumps. Stirring continuously and adding the mixture steadily keeps the custard smooth while the starch thickens it.
