What each ingredient does

Crabs
Provide the main meat and flavor of the soup.
Bacon
Adds smoky, savory fat and flavor to the broth.
Rich milk
Gives the soup a creamy, smooth body.
Egg yolks
Enrich and thicken the milk mixture, giving body when gently heated.

The step that matters

Add the milk mixture without boiling. Egg yolks in the milk can curdle and turn grainy if the soup boils after they are added. Gentle heat thickens them smoothly into the soup.
