Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the mixture and help it set firm as it cooks.
Bread crumbs
Absorb moisture and give the pudding a soft, tender body.
Beef suet
Adds fat that keeps the pudding moist and rich as it steams.
Raisins
Provide concentrated sweetness and chewy texture.
Butter
Enriches the sauce with fat for a smooth, rich mouthfeel.

The step that matters

Stir in the beaten egg when the mixture is not too hot. If the sauce is too hot, the egg can scramble instead of thickening smoothly, leaving a grainy texture.
