Why it works: Clove and allspice match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 7,874 recipes. Both carry estragole, which smells anise, licorice. The science ↓
Green Tomato Pickle
Ingredients
Directions
Skin the green onions and sprinkle them with coarse sea salt in layers.
Let them stand for 24 hours, then drain in a sieve and rinse with fresh water.
Scald the onions in a strong ginger tea made from the bruised ginger and boiling water.
In a kettle, layer the sliced onions and tomatoes with the spices and brown sugar.
Pour enough white vinegar over the layers to cover them well.
Cook the pickle until the tomatoes are clear and tender, about 1 hour.
