What each ingredient does

Grapes
Provide the fruit flavor and the pulp that forms the body of the preserve.
Granulated sugar
Adds sweetness and helps thicken the preserve as it cooks down.
Seeded raisins
Add concentrated sweetness and chewy texture to the preserve.
English walnuts
Add crunch and a toasty, nutty flavor throughout the preserve.

The step that matters

Stirring during the final 30-minute cook. Sugar-rich fruit mixtures can scorch on the bottom of the pan as water evaporates and the sugar concentrates. Frequent stirring spreads heat evenly and keeps the preserve from burning.
