Why it works: Lemon and nutmeg match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 11,318 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Lemon Puffs

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix the flour, powdered sugar, butter, beaten eggs, salt, grated lemon peel, and milk until well combined.

Bake

  1. Pour the mixture into small pans and bake until golden.

Make the sauce

  1. For the sauce, combine sugar, butter, egg, lemon juice, grated lemon rind, nutmeg, boiling water, cream, and sugar in a bowl.

  2. Beat the mixture hard for 10 minutes, adding the boiling water a spoonful at a time.

  3. Place the bowl over a pot of simmering water, stirring constantly without letting it boil until hot.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Provides the starch and gluten that give the puffs their structure.
Eggs
Set during baking to give structure, and their beaten whites help the puffs rise.
Butter
Adds fat that tenderises the crumb and carries flavour.
Milk
Adds moisture so the batter mixes smoothly and bakes through.
Powdered sugar
Sweetens the batter and helps the crust brown.
Lemon juice
Adds acidity that brightens the sauce and balances its sweetness.

The step that matters

Heating the sauce over simmering water. Egg proteins thicken the sauce gently, but if it boils they tighten and curdle, leaving a grainy texture. Stirring constantly and keeping it below boiling keeps it smooth.
