Malaga Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Cream together the sugar and butter.

  3. Add the sweet milk and mix well.

  4. Combine the flour and baking powder, then add to the mixture.

  5. Beat the egg whites until frothy and fold into the batter.

  6. Flavor the batter with lemon and pour into baking sheets.

  7. For the filling, beat 3 egg whites with sugar until frothy.

  8. Reserve some of the frosting for the top of the cake.

  9. Stir in the chopped raisins and lemon extract.

  10. Spread the filling between the layers of the cake.
