Pickled Beans
Ingredients
Directions
String and break each bean.
Wash the beans and put them in a pot to boil.
Cook until they begin to burst open.
Remove from heat and let them cool.
Salt the beans as if preparing to use them fresh.
Pack the beans into a stone jar or container.
Add a weight on top to keep them submerged.
Prepare a weak brine with water and salt, then pour it over the beans.
Cover the jar and let it sit for a few weeks until sour.
