Strawberry Preserves

Ingredients

Directions

Prepare the fruit

  1. Select the largest strawberries and hull them.

  2. Weigh the strawberries and use an equal amount of sugar.

  3. Layer strawberries and sugar in a preserving kettle until half the sugar is used.

Make the syrup

  1. Heat over moderate heat until the sugar melts.

  2. Gradually add the remaining sugar and boil hard for 5 minutes, skimming off any scum.

  3. Carefully remove the strawberries with a spoon and spread them on flat dishes to cool.

  4. Boil the syrup again, skimming if necessary.

  5. Strain the syrup into a mug or pitcher.

Jar and seal

  1. Place the strawberries in glass jars and pour equal amounts of syrup over them.

  2. Seal the jars with a round piece of white paper dipped in brandy.

    Shared aroma: beta-damascenone (apple, rose).

Sugar and brandy barely smell alike, yet cooks put them together in 11,939 recipes: they work on texture and structure more than aroma.

What each ingredient does

Strawberries
Provide the fruit, flavour and bulk that the preserve is built around.
Double refined loaf sugar
Sweetens the fruit and draws out its moisture to form a thick syrup.

The step that matters

Boil the syrup hard and skim it. Boiling hard after the sugar dissolves thickens the syrup so it sets well, and skimming removes scum that would cloud the preserve and can spoil it.
