What each ingredient does

Eggs
Set the custard and bind the pudding into a firm, sliceable body.
Cream
Adds richness and a smooth, tender texture to the custard.
Milk
Thins the custard and adds moisture for a soft, even set.
French rolls
Soak up the custard and form the bulk and structure of the pudding.
Macaroons or ratafias
Add almond flavour and a chewy, crumbly texture between the layers.
Brandy
Adds a warm, aromatic flavour that carries through the soaked layers.

The step that matters

Steam gently for one and a half hours. Gentle steam heats the custard slowly so the eggs set evenly. Vigorous boiling can make the pudding rough, porous, or cause it to break apart.
