Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rolls or biscuits
Hollowed shell that holds the filling and soaks up its juices.
Oysters
Main filling whose briny liquor adds the dish's characteristic flavor.
Butter
Fat that enriches the sauce and coats the inside of the rolls.
Flour
Thickens the butter and milk into a binding sauce.
Milk
Adds moisture and body, making the filling creamy.

The step that matters

Cook the oysters until just boiling. Oysters toughen and shrink when overheated, as their proteins tighten under prolonged high heat. Watch for the edges curling and stop once they are cooked, since the extra minutes in the sauce can make them rubbery.
