What each ingredient does

Liver slices
Main ingredient; slow frying browns the surface while the inside stays tender.
Hot lard
Fat that conducts heat for even browning and adds richness to the surface.
Water
Boiled in the pan to create steam that keeps the liver moist during covered cooking.

The step that matters

Covered simmer with water. Boiling the water to steam under a cover gently finishes the liver. Cooking too long or too hard toughens liver proteins, so keep the heat moderate and the time short.
