Delicious Small Cakes

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 350°F (175°C).

  2. In a bowl, mix the egg yolks, flour, butter, lard, and sugar until well combined.

  3. In a separate bowl, beat the egg whites until frothy.

  4. In a saucepan, combine the sugar and water. Boil slowly until it begins to rope.

  5. Gradually pour the boiling sugar into the beaten egg whites while continuing to beat until it thickens and cools slightly.

  6. Fold in the powdered cinnamon into the icing.

  7. Ice the small cakes using a stiff feather or spatula.

  8. Optionally, add the unbeaten egg whites with more sugar to make additional small cakes.
