Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Beat the egg yolks and whites together in a bowl.

  3. In another bowl, cream the butter with the sugar until light and fluffy.

  4. Mix the beaten eggs into the butter and sugar mixture.

  5. Add the lemon juice and rind, and mix well.

Assemble and bake

  1. Line a baking dish with rich pastry.

  2. Layer sweetmeats or preserves on the pastry.

  3. Pour half of the egg mixture over the preserves.

  4. Add another layer of sweetmeats, then pour the remaining egg mixture on top.

  5. Bake until set and golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks and whites
Set the custard and give it a rich, structured texture when baked.
Butter
Adds richness and a tender crumb to the custard filling.
Sugar
Sweetens the filling and helps cream with butter to a light base.
Lemon juice and rind
Adds acidity and aroma that balance the sweetness of the filling.
Sweetmeats or preserves
Provide concentrated fruit sweetness and flavour within the layers.

The step that matters

Bake until set and golden. Eggs set as they heat; underbaking leaves the filling runny and overbaking makes it curdle and weep. Check for a firm centre and even colour.

Swap the peach

How well each one fits the dish's main ingredients (egg, sugar, butter, lemon):
