Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken and set the filling as they heat, giving the cheesecake its structure.
Sugar
Sweetens the filling and helps balance the sharpness of the lemon.
Butter
Adds fat for richness and a smooth, tender texture.
Lemons
Provide acidity and bright lemon aroma from the juice and zest.

The step that matters

Bake until just set. Egg yolks thicken as they heat. Overbaking pushes them past the set point, so the filling can turn grainy, weep, or crack.

Swap the lemon
