Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped with sugar to lighten the mixture and help it set when baked.
Egg yolks
Add richness and help the filling bind and set as it bakes.
Almonds
Provide the main body, nutty flavor and texture of the filling.
Powdered sugar
Sweetens the base and dissolves easily into the beaten egg whites.
Fresh butter
Adds fat for richness and a smooth, tender texture.

The step that matters

Bake until set. Egg proteins set with heat, so the filling should be baked just until firm; overbaking can make it dry and grainy, while underbaking leaves it runny.

Swap the mace

How well each one fits the dish's main ingredients (sugar, egg, almond, orange, butter, lemon):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against sugar, egg, almond, orange, butter, lemon. Candidates are from the same food group and used in at least 100 recipes.
