Why it works: Peach and almond match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and 466 recipes mention both. Both carry 2,4-decadienal, which smells seaweed. The science ↓

Blanc-mange

Ingredients

Directions

Make the mixture

  1. Soak the gelatine in cold water to soften it.

  2. Boil the cream in a saucepan.

  3. Stir the softened gelatine into the boiling cream and sweeten to taste.

  4. Add the peach water once the mixture cools.

  5. Pound the blanched almonds very fine and boil them with the mixture for added flavor.

Set and serve

  1. When the mixture begins to thicken, pour it into moulds.

  2. Serve with plain cream.

What each ingredient does

Gelatine
Sets the cooled cream into a firm, sliceable blanc-mange as it chills.
Rich cream
Forms the rich base, giving the dessert its body and smooth, creamy mouthfeel.
Blanched almonds
Add a nutty almond flavour and a little texture to the cream.
Peach water
Adds a delicate peach aroma and flavour to the dessert.

The step that matters

Pouring into moulds as it thickens. Gelatine sets as the mixture cools. Pouring while it is still thin lets it fill the moulds evenly, while waiting too long lets it set in the pan and makes it hard to turn out cleanly.

Flavor stand-ins for the peach

How well each one fits the dish's main ingredients (cream, almond):

  1. Vanillabetter flavor fit
  2. Coconutbetter flavor fit
  3. Avocadobetter flavor fit
  4. Peachthe original

Fit is the average pairing score against cream, almond. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
