Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carrots
Form the main body of the pickle, and cooking them until tender softens their structure so they take up the vinegar.
Cold vinegar
Provides the acidity that gives the pickle its sharp flavor and preserves the carrots.
Celery seed
Adds a warm, aromatic savory flavor to the pickling liquid.

The step that matters

Boiling the carrot slices until tender. Boiling softens the carrot's cell walls so it can absorb the vinegar. Undercooked slices stay firm and pickle unevenly, while overcooked slices turn mushy.

Swap the onion

How well each one fits the dish's main ingredients (carrot, vinegar, celery):

  1. Parsnipfits better
  2. Turnipfits better
  3. Mustardfits better
  4. Onionthe original

Fit is the average pairing score against carrot, vinegar, celery. Candidates are from the same food group and used in at least 100 recipes.
