Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the potato base

  1. Steam the potatoes in their jackets until done.

  2. Peel and mash the potatoes while hot.

  3. Add butter, cream, salt, and pepper to the mashed potatoes and beat until smooth and light.

Fold and bake

  1. Beat the egg whites to stiff peaks and gently fold into the potato mixture.

  2. Heap the mixture in a baking dish or drop spoonfuls onto greased paper.

  3. Dust with grated cheese and bake in a 400°F (200°C) oven until golden brown.

  4. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the starchy bulk that gives the soufflé its soft, light body.
Egg whites
Whipped to stiff peaks, they trap air that lifts and sets the mixture as it bakes.
Cream
Adds moisture and richness, keeping the mashed potato smooth and tender.
Butter
Adds fat for richness and a smoother, softer texture in the mash.
Grated cheese
Browns on the surface in the oven, adding colour and savoury flavour.

The step that matters

Fold the egg whites gently. Stiff egg whites hold air bubbles that make the soufflé rise. Stirring or deflating them vigorously knocks out that air, leaving a dense result instead of a light one.

Swap the potato

How well each one fits the dish's main ingredients (butter, cream, pepper, egg, cheese):

  1. Potatothe original
  2. Capsicumfits about as well
  3. Asparagusfits about as well
  4. Spinachfits about as well

Fit is the average pairing score against butter, cream, pepper, egg, cheese. Candidates are from the same food group and used in at least 100 recipes.
