Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Small onions
Provide the crisp, pickled vegetable that is the main product of the recipe.
Vinegar
Acidity that preserves the onions and gives them their sharp, tangy flavor.
Salt
Draws water out of the onions during brining, firming their texture.
Alum
Helps keep the onions firm and crisp during pickling.

The step that matters

Draining and scalding the brined onions. Salt brining draws water and salt into the onions; draining and rinsing with boiling water removes surface salt so the pickling vinegar is not diluted or overly salty, and the onions stay firm as the hot vinegar is added.

Swap the onion

How well each one fits the dish's main ingredients (allspice, pepper, vinegar):

  1. Mustardfits better
  2. Capsicumfits better
