Why it works: Vinegar and pepper are a kitchen classic. They rank in the top 14% of all ingredient pairs, and cooks put them together in 27,814 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Boiled Beets

Ingredients

Directions

Boil the beets

  1. Wash the beets without cutting them, leaving an inch of stalk to prevent bleeding.

  2. Boil the beets until tender: about 1 hour for young beets in summer, or nearly a day for older beets in winter.

  3. Transfer the boiled beets to cold water and slip off the skins.

Slice and serve

  1. If small, cut the beets lengthwise twice; if larger, slice them thinly.

  2. Heat the sliced beets over boiling water until warmed through.

  3. In a separate pan, combine vinegar, water, butter, brown sugar, salt, and pepper; bring to a boil.

  4. Pour the mixture over the sliced beets and serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beets
Main vegetable; cooking until tender softens their dense flesh for slicing and eating.
Vinegar
Adds acidity that gives the sauce a sharp, tangy balance against the sweetness.
Brown sugar
Adds sweetness and depth that balances the sharpness of the vinegar.
Butter
Adds fat and richness to the sauce, giving it a smooth, rounded mouthfeel.

The step that matters

Leaving the stalk and skin intact while boiling. Cutting the beets or leaving off the stalk lets color and juice bleed into the cooking water, leaving the beets pale and less flavorful. Beets cooked whole and skinned after boiling keep their color and sweetness.
