Fruit Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter in a large bowl.

  3. Beat the egg yolks until light.

  4. Stir in the sugar, nutmeg, grated lemon rind, and creamed butter.

  5. Beat the egg whites until stiff.

  6. Fold the egg whites in alternately with sifted flour, reserving ½ cup for the fruit.

  7. Dissolve the baking soda in 1 teaspoon of boiling water.

  8. Mix the dissolved baking soda thoroughly into the batter.

Add the fruit and bake

  1. Add the brandy, lemon juice, and fruit to the batter.

  2. Pour the mixture into a prepared cake pan.

  3. Bake for 1 ½ hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites trapped by beating give lift, and yolks add richness and structure to the batter.
Butter
Creaming with sugar traps air and gives the cake a tender, rich crumb.
All-purpose flour
Its proteins set during baking to form the cake's main structure.
Granulated sugar
Sweetens the batter and helps hold air from creaming for a tender texture.
Baking soda
Reacts with acidic lemon juice to release gas, helping the cake rise.
Raisins
Add moisture and chewy sweetness throughout the cake.

The step that matters

Folding the egg whites in alternately with flour. Folding gently keeps the air beaten into the whites. Deflating them makes the cake dense, because the whites are what lift the heavy batter during baking.

Swap the lemon

Fit is the average pairing score against flour, butter, sugar, almond, raisin, brandy, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
