Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Cream the butter in a large bowl.

  2. Beat the yolks of the eggs until very light, then gradually stir in the brown sugar, spices, molasses, and creamed butter.

  3. Beat the egg whites to a stiff froth and fold them into the mixture alternately with the sifted flour.

  4. Add the brandy and all the fruit, mixing well.

Bake

  1. Pour the batter into a prepared cake pan and bake for 1.5 hours at 350°F (175°C).

What each ingredient does

Eggs
Yolks enrich and bind the batter, while whipped whites lighten it and help it rise.
Flour
Provides the structure that sets the cake as it bakes.
Butter
Adds fat for tenderness and richness in the crumb.
Brown sugar
Adds sweetness and moisture, and helps the cake brown.
Raisins
Add chewy texture and concentrated sweetness throughout the cake.

The step that matters

Folding the egg whites. Whites beaten to a stiff froth trap air that lifts the batter. Folding gently and alternating with the flour keeps that air from deflating, so the cake stays light.

Swap the currant

How well each one fits the dish's main ingredients (flour, sugar, butter, raisin, lemon, orange, cinnamon):
