What each ingredient does

Gelatine
Sets the liquid cream into a firm, sliceable structure as it cools.
Cream
Adds richness and a smooth, creamy texture to the set dessert.
Sugar
Sweetens the coffee mixture and balances its bitterness.

The step that matters

Dissolving the soaked gelatine. Gelatine must dissolve fully in the warm coffee mixture, because any granules left undissolved will leave a gritty, uneven set. Gentle heat over boiling water helps it melt evenly without boiling the liquid.
