What each ingredient does

Shad
Forms the main body of the dish, cooking to a moist, flaky texture.
Butter
Adds richness and fat, helping the fish brown and stay moist as it finishes.
Walnut catsup
Contributes savoury, tangy depth as a sauce poured over the cooked fish.

The step that matters

Baste with saltwater as it cooks. Salt in the pan water is drawn into the fish and seasons it while the saltwater keeps the surface moist as heat rises, helping prevent it from drying out before it is done.

Swap the walnut

How well each one fits the dish's main ingredients (spread, butter):

  1. Hazelnutfits about as well
  2. Almondfits about as well
  3. Walnutthe original
  4. Peanutfits less well

Fit is the average pairing score against spread, butter. Candidates are from the same food group and used in at least 100 recipes.
