Oyster Croquettes

Ingredients

Directions

Prepare the filling

  1. Remove the hard end of the oysters, leaving the other end intact for soup or stew.

  2. Scald the oysters and chop them finely.

  3. Rub the potatoes through a colander and mix with the chopped oysters in equal weight.

  4. Add butter, salt, pepper, mace, and cream to the mixture.

Shape and fry

  1. Form the mixture into small rolls.

  2. Dip each roll in beaten egg and coat with breadcrumbs.

  3. Fry in hot lard until golden brown, testing the temperature with a small piece of bread that should brown in one minute.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavor and the bulk of the filling.
Potatoes
Add starch and body so the filling holds its shape when rolled.
Butter
Adds richness and fat for a tender interior.
Egg
Binds the breadcrumb coating to the roll and helps it brown evenly.
Breadcrumbs
Form a crisp, golden outer crust when fried.

The step that matters

Testing the frying temperature. If the lard is too cool, the croquettes absorb grease and turn soggy before browning; if too hot, the outside darkens before the filling heats through. A bread test checks that the fat is hot enough for quick, even browning.

Swap the mace

How well each one fits the dish's main ingredients (oyster, potato, butter, pepper, cream, egg):

  1. Parsleyfits better
  2. Nutmegfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against oyster, potato, butter, pepper, cream, egg. Candidates are from the same food group and used in at least 100 recipes.
