  6. Add tarragon vinegar to the sauce.

  7. Heat gently without boiling.

What each ingredient does

Sweetbreads
Provide the tender, delicate meat that forms the body of the filling.
Butter
Enriches the sauce and carries flavor, giving it a rich, smooth mouthfeel.
Flour
Thickens the butter and stock into a creamy sauce that holds the filling together.
Oysters
Add a briny, savory flavor and soft texture to the filling.
Stock
Supplies the liquid base that turns the roux into a creamy sauce.
Tarragon vinegar
Adds a light acidity that brightens the rich, creamy sauce.

The step that matters

Heat gently without boiling. Boiling a cream-and-flour sauce can cause it to break or turn grainy, and it can toughen the delicate sweetbread pieces. Gentle heat keeps the sauce smooth and the meat tender.

Swap the nutmeg
