Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean boiled ham
Provides the main meaty body that is pounded into a smooth paste.
Fat boiled ham
Adds richness and moisture so the paste stays soft and spreadable.
Clarified butter
Forms a sealing layer on top that limits contact with air.

The step that matters

Pounding the ham to a smooth paste. Chopping alone leaves coarse pieces that do not bind. Pounding breaks the meat fibres down so the paste holds together and spreads evenly when pressed into pots.
