What each ingredient does

Small onions
Are the main vegetable, becoming tender and mellow as they pickle in the spiced vinegar.
Vinegar
Provides the acidity that preserves the onions and gives them their sharp flavour.
Whole allspice
Adds warm, aromatic spice flavour that infuses into the vinegar and onions.
Black pepper
Adds pungent, aromatic heat that infuses into the pickling liquid.

The step that matters

Cover with boiling water, then pour it off. Blanching the onions briefly in boiling water helps loosen their skins and softens their raw bite, so they take up the brine more evenly. Pouring off the water before adding the vinegar keeps the pickling liquid from being diluted.

Swap the onion

How well each one fits the dish's main ingredients (allspice, pepper, vinegar):

  1. Mustardfits better
  2. Capsicumfits better
  3. Horseradishfits better
