Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Beat the egg whites to a stiff froth.

  3. Gradually add the powdered sugar, grated rind, soft pulp, and juices of the oranges and lemon.

  4. Grease three jelly-cake tins with butter.

  5. Spread the batter in the tins about ¼ inch thick.

  6. Bake the cakes in the hot oven, watching closely until done.

  7. Turn the baked cakes upside down on brown paper to cool.

  8. Wash and butter the pans, refill with batter, and return to the oven.

  9. Ice the cakes with the prepared icing once they are cool.

  10. Trim the edges with a sharp knife before icing the top and sides.
