Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Forms the body of the pudding, swelling and softening as it boils.
Raisins
Add pockets of sweetness and moisture within the cooked rice.
Butter
Adds richness and fat, giving the sauce a smooth, silky texture.
Brown sugar
Sweetens the sauce and adds a deeper, caramel-like flavour.

The step that matters

Leave room for expansion in the cloth. Rice absorbs water and swells considerably as it cooks. If the cloth is packed tightly, the rice cannot expand and the pudding may burst the cloth or cook unevenly.

Swap the raisin

How well each one fits the dish's main ingredients (rice, butter, sugar, nutmeg):

  1. Coconutfits better
  2. Vanillafits better
  3. Figfits about as well
  4. Raisinthe original

Fit is the average pairing score against rice, butter, sugar, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
