Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Starch that thickens the liquid and turns it clear and jelly-like as it cooks and cools.
Sugar
Adds sweetness and balances the flavor of the plain tapioca jelly.

The step that matters

Boil until the tapioca is clear. Tapioca pearls thicken and turn translucent only when fully cooked. Stopping early leaves cloudy, grainy pieces and a jelly that may not set firmly as it chills.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (sugar, brandy):

  1. Vanillafits better
  2. Apricotfits better
  3. Raisinfits better
  4. Lemonthe original

Fit is the average pairing score against sugar, brandy. Candidates are from the same food group and used in at least 100 recipes.
