Codfish for Breakfast

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the fish

  1. Preheat the oven to 350°F (175°C).

  2. Remove all bones from the codfish.

  3. Place the codfish in a frying pan covered with cold water and heat gradually for 10 minutes.

  4. Drain the fish and add pepper, butter, and cream, reserving 2 tablespoons of cream for the flour.

Thicken and serve

  1. Gradually mix the flour into the reserved cream until smooth.

  2. Add the flour mixture to the fish and let it simmer for 2-3 minutes.

  3. Stir in the well-beaten egg and serve immediately.

  4. Garnish with points of dry toast.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Codfish
Provides the main body and flavour of the dish.
Flour
Thickens the cream and fish mixture as it simmers.
Egg
Adds richness and helps bind the mixture when stirred in.
Cream
Adds moisture and richness, and carries the flour smoothly into the fish.
Butter
Adds fat and richness to the fish mixture.

The step that matters

Adding the flour mixture to the fish. Flour must be mixed smoothly into the cream first; added as lumps, it will not disperse evenly and the sauce will thicken unevenly. Simmering gently then cooks out the raw flour taste and sets the thickening.
