Ingredients

Directions

Prepare the sweetbreads

  1. Soak sweetbreads in cold water for at least 30 minutes to cleanse and whiten them.

  3. Remove sweetbreads from the pot, drain them, and cool them.

  4. Cut the sweetbreads into dice.

  5. Season the diced sweetbreads with salt and pepper, and dredge with flour.

Make the sauce

  1. Melt butter in a pan.

  2. Add flour to the melted butter and stir well.

  3. Gradually pour in stock until the sauce reaches a creamy consistency.

  4. Season the sauce with salt, pepper, cayenne, and nutmeg.

Combine and serve

  1. Add the seasoned sweetbreads to the sauce, stirring to prevent browning.

  2. Add oysters, mushrooms, olives, and tarragon vinegar to the sauce.

  3. Stir and heat the mixture without boiling.

  4. Serve in a warmed vol-au-vent crust.

What each ingredient does

Sweetbreads
Provide the tender, delicate meat that forms the body of the filling.
Butter
Enriches the sauce with fat, giving it a smooth, rich mouthfeel.
Flour
Thickens the butter and stock into a creamy sauce that coats the filling.
Stock
Forms the liquid base of the sauce, carrying its flavour and body.
Oysters
Add a briny, savoury flavour and soft texture to the filling.
Olives
Add a salty, briny accent that contrasts with the rich sauce.

The step that matters

Stir and heat the mixture without boiling. Boiling a flour-thickened sauce can break its smooth texture and toughen delicate proteins in the oysters and sweetbreads, so gentle heat keeps the filling tender.

Swap the nutmeg

How well each one fits the dish's main ingredients (oyster, mushroom, olive, butter, flour, sauce, pepper):

  1. Capersfits better
  2. Thymefits better
