Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter in a bowl.

  3. Stir in the flour until combined.

Make the batter

  1. In another bowl, beat the egg yolks and sugar together until very light.

  2. Mix the yolk and sugar mixture with the flour and butter.

  3. Beat the egg whites until stiff and fold them into the mixture.

  4. Add the lemon juice and rind, and the mace.

  5. Pour the batter into paper-lined pans.

Bake

  1. Bake without moving the pans until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air and adds richness and tender texture.
Flour
Provides the structure that holds the cake together as it sets.
Sugar
Sweetens the cake and helps create a light, tender crumb when creamed or beaten.
Eggs
Add structure and richness, and whipped whites lighten the batter.

The step that matters

Fold in the stiffly beaten egg whites. Folding gently keeps the air bubbles in the whites intact; overmixing deflates them and produces a denser, heavier cake.

Swap the mace

How well each one fits the dish's main ingredients (flour, sugar, butter, lemon, egg):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against flour, sugar, butter, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
