Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat your oven to 350°F (175°C).

  2. Cream the butter in a large bowl.

Make the batter

  1. Beat the yolks of the eggs until light, then gradually stir in the sugar, nutmeg, grated lemon rind, and creamed butter.

  2. Beat the egg whites to a stiff froth and fold them in alternately with the sifted flour, reserving ½ cup of flour for the fruit.

  3. Dissolve the baking soda in 1 teaspoon of boiling water and mix it in thoroughly.

  4. Add the brandy, lemon juice, and reserved fruit to the batter.

Bake

  1. Pour the mixture into a prepared cake pan and bake for 1.5 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Add structure, moisture and richness, and the whipped whites lighten the batter.
All-purpose flour
Provides the structure that holds the cake together as it sets.
Unsalted butter
Adds richness and a tender crumb.
Granulated sugar
Adds sweetness and helps create a soft, tender texture.
Baking soda
Reacts with acidic ingredients to produce gas that helps the cake rise.
Raisins
Add sweetness and moisture throughout the cake.

The step that matters

Fold in the egg whites gently. Folding the stiffly beaten whites in gently, alternating with flour, keeps the air that gives lift. Overmixing deflates the foam and produces a dense, tough cake.

Swap the lemon

How well each one fits the dish's main ingredients (flour, butter, sugar, almond, raisin, brandy, nutmeg):

Fit is the average pairing score against flour, butter, sugar, almond, raisin, brandy, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
