Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Cream the butter in a bowl.
Add the juice and grated rind of the lemons to the butter.
Stir in part of the sugar and the egg yolks, then add the remaining sugar.
Beat the mixture until very light.
Whisk the egg whites to a stiff froth and gently fold them into the mixture.
Pour the mixture into pie plates lined with pastry.
Bake at 350°F (175°C) for half an hour.
Let cool before serving.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
