Roast Meats, Warmed Over
Ingredients
Directions
Boil the gravy in a pan over the fire.
Dip each slice of beef in the gravy, turning quickly, just long enough for the heat to penetrate.
Remove the beef and place it in a hot dish, keeping it warm.
Pour the scalding gravy over the beef.
If there is leftover rare beef on the bone, place it in the oven to heat through, basting with gravy to prevent drying.
Make additional gravy from scraps and bones by boiling them in a pan, then thicken and brown as per standard gravy instructions.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
