What each ingredient does

Milk
Forms the creamy base that the gelatin sets into a smooth, soft body.
Gelatin
Sets the liquid milk into a wobbly, sliceable gel as it cools.

The step that matters

Stir in gelatin until fully dissolved. Undissolved gelatin granules do not hydrate evenly and leave gritty specks or weak patches. Stirring while the milk is hot lets the gelatin disperse fully so the set is smooth and even.

Flavor stand-ins for the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (milk, gelatin, chocolate, vanilla):

  1. Coconutbetter flavor fit
  2. Strawberrybetter flavor fit
  3. Figbetter flavor fit
  4. Lemonthe original

Fit is the average pairing score against milk, gelatin, chocolate, vanilla. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
